How do we process

Gherkins

IVPL’s two factories have adopted the best industry practices in gherkin processing to deliver the highest quality products to its customers, meeting international quality specifications and food safety standards.

 

IVPL’s extensive processes exceed industry standards to eliminate product defects and ensure the highest quality. IVPL uses a three-stage inspection and three-stage washing unique to the Indian gherkin industry. Such meticulous processing ensures that IVPL gherkins are defect free when customers receive the product at their foreign destinations.

First Inspection & Culling

When they receive gherkins at the factory, the IVPL production team manually inspects and culls them to remove infested and damaged fruits and extraneous matter. After inspection and culling, the production team temporarily stores the good fruits in crates for further processing.

Second Inspection

​The washed fruits go through a second check on the culling conveyor, where the IVPL production team removes off-specification fruits and foreign materials.

Packing

IVPL production team finally fills and weighs graded gherkins into food-grade 240 or 260 litre HM-HDPE barrels. IVPL offers a choice of natural vinegar, acetic acid, and brine as preservation media for its gherkins.

Three-Stage Washing & One-Stage Rinsing

IVPL uses potable water to wash gherkins. IVPL washes all gherkins processes in three stages, using a brush washer in the third washing.  After the first culling, gherkins move to a soaking tank and a soaking washer and a brush washer.

Grading & Final Inspection

A grading machine grades the good fruits before the final culling on an inspection table with a well-lit conveyor belt
